He prepared a hearty black bean soup garnished with pickled carrots, onions and mild peppers, stuffed red peppers served with a delicious roasted red pepper coulis and a carpaccio of portabello mushrooms served with with a julienne of mixed vegetables, a mixed salad with fresh seasoned artichoke, two types of olives, and heirloom tomato dressed with a white balsamic vinaigrette.
