3. Shouldn't finish without mentioning the hotel restaurant, which is run by a very good executive chef with a commitment to using local ingredients in food and for wine and spirits.

7. Dining at the 2100 Bistro was strange: though there weren't many people in the restaurant we were told that they were extremely busy and had to wait a long time for our drinks and then for our food, which when it finally came, was good.

9. Staff is excellent and accommodating, food is fantastic, but pricey so go grab dinner down the street if you don't have to have dinner at the hotel if only to experience Seattle a bit more.
