1. When I brought it to the Casino Manager (which was really just the assistant food and beverage director taking his weekend turn, because apparently even though this place is raking in over a million a day they can't pay to have a real Casino Manager that has any clout to actually resolve anything) attention, he tried to fix it by offering free food (of course he is the assistant food and beverage manager).

The waitstaff at the restaurant downstairs and the one on the roof complained about their managers, their customers, how overloaded they were with work (and this when there were less than 12 people in the restaurant!) and even told us they didn't trust the kitchen to redo things when we sent something back.
